To Shine Brightly

called-to-suffer“We suffer because through suffering, we can shine brightly in a broken world.  Our suffering can be used as a pointer to Jesus.  As we entrust our souls to God, as we seek to glorify Him, we will point to how He is enough for us in good or bad times”.

Jason, thank you my friend.  1 Peter 4 is just the ticket.  I have been sorely in need of a reminder…

I have entrusted my soul to a faithful Creator and will live to glorify Him in the suffering.  So how will I spend today glorifying God… Simple.  I’m making collards and peach pie.  Twenty or so years living in the south has taught this Californian a thing or two about great food.

1/2 pound smoked bacon fried
1 large onion

3 tablespoon garlic powder
1 tablespoon hot red pepper sauce (I like Tapatio)

1 tsp red pepper flakes
1 large bunch collard greens

1 tablespoon butter                                                                                                                                                                         2 tablespoons bacon fat

2-3 quarts of water

Cook in a large soup pot until greens are tender.

Perfect-Peach-CrispPeach Crisp

For the filling-

6 fresh peaches peeled and diced

1 teaspoon nutmeg

½ cup flour

½ cup brown sugar

1 tablespoon of melted butter

For the topping-

½ cup brown sugar

½ cup flour

¼  cup of oatmeal

½ teaspoon cinnamon

4 tablespoons softened butter

Combine topping ingredients in a bowl and mix until it resembles coarse crumbs.  Sprinkle over the filling and bake at 350 degrees until golden brown, 35 to 40 minutes.  Serve with vanilla bean ice cream.

Those who suffer because that is God’s will for them must entrust themselves to a faithful creator and continue to do what is good.    (1Pe 4:19)

Happy summer!  Serve in the hope of Christ, glorifying His name.
